Wonderful Brined the chicken first overnight in fridge. I took your rub recipe and mixed with 1 and 1/2 sticks of room temp. real butter. Let that sit to instill seasonings. Put this mixture in between skin and chicken breast and then covered all of chicken.Put lemon and onion in chicken cavity. Also put hickory chips on in to smoke as it grilled. Used indirect grilling method. Put foil pan under chicken below grate to catch melted butter so it wont flame. Make sure lid is on to control temp. Flavorful and juicy
Very good rub I opened the beer and pored out about an ounce. I personally set the grill to high for the first 10-15 mins to ensure crispy skin. Then I turned down to 350 until it hits 160 degrees. Made this again last night -- fantastic as always I cleaned and rubbed the bird in the morning (only used about 1/2 of the rub), then put it in the fridge for 4-5 hours. When I lit the grill (set for med-high heat), I put the chicken on the can/stand (treated with cooking spray). I applied leftover rub to any bare spots on the chicken, and stuck a wad of foil in the neck cavity. After preheating for 10-15 minutes, I put the chicken on the grill and left it on med-high (about 400-425F) for 5 minutes to crisp the skin, then turned down to medium-low (about 300-325F) Took about 1-1/2 hours to cook this 5-lb bird to perfection. Leftover meat makes the best chicken salad evah

I followed the recipe for the rub, but left out the cayenne since my family has a low heat tolerance. I rubbed the chicken down, covered it, and let it sit in the fridge while I was at work. Since Im a novice homebrewer, and had a batch of Sunset Pale Ale ready, I used it as the beer, and shoved an onion in the neck. I placed it on a half cooking sheet, set it on the preheated grill, and cooked it for an hour and a half at 350 and it came out perfect. The skin was crispy, and the meat was moist and flavorful. Id skip the microbrew next time though. I dont think the flavor of the beer added anything. Next time, like a previous reviewer suggested, Ill put a twig of rosemary in a light beer like Bud or Coors.

Wow This chicken is amazing I made it two days ago and it was so simple The rub is OUTSTANDING and agree with others who have rated this recipe - it is a great rub. I did use only 1 tsp of cayenne pepper as I didnt want it to overwhelm the other spices. It was perfect The skin was crispy and the meat was juicy. Even my son, who is somewhat picky, said it was delicious. If you have left overs, try to get some of the rub on the inner parts of the breast by placing it against other pieces that still have skin on. I put all the little pieces together and smothered them in any remaining juices on the serving platter Yummy Definitely a keeper for our family and a great dish if youre having guests

Ive made this recipe 3 times. Its excellent. Ive also tried some of the other beer can chicken recipes on here but this one is the best. Be careful to not put too much of the rub under the skin as it can overpower the flavor with too much spice, other than that, its very easy. I use a meat thermometer and let it reach 165 with the indirect heat cooking method. Well done Clay
Used 5lb. chicken and cooked just a little longer. Swwet onion fell out of the neck cavity, but chicken was very moist and tender.
Made it tonight and it was a hit. I was thinking the spice mixture had too many ingredients in it, but I pretty much followed it and it was very good. I ran into an issue using cheap briquettes, but was able to finish the bird off with a gas BBQ that is part of my outdoor cooking set-up. I used Bud Light Lime beer, but I think just about anything would be good as the liquid steams up through the cavity. Ive used Dr. Pepper before and it was good as well, but I think its the rub that sets this off. Whatever rub you choose, getting it under the skin (I used toothpicks to stitch the skin back together) and inside is key. I let mine set after the rub for about 1.5 hours before I set it on the grill. I also used a digital remote thermometer and tracked it to 165 deg. Pulled the bird out of the BBQ and let it set for 10 mins. Spectactular

DALLAS (AP) — The Uvalde school district's police chief was put on leave Wednesday following allegations that he erred in his response to the mass shooting at Robb Elementary School that left 19 students and two teachers dead.

Uvalde Consolidated Independent School District Superintendent Hal Harrell said that he put schools police Chief Pete Arredondo on administrative leave because the facts of what happened remain unclear. In a statement, Harrell did not address Arredondo's actions as on-site commander during the attack but said he didn't know when details of federal, state and local investigations into the law enforcement response to the slayings would be revealed.

"From the beginning of this horrible event, I shared that the district would wait until the investigation was complete before making personnel decisions," Harrell said. "Because of the lack of clarity that remains and the unknown timing of when I will receive the results of the investigations, I have made the decision to place Chief Arredondo on administrative leave effective on this date."

A spokesperson for the Uvalde school district, Anne Marie Espinoza, declined to say whether Arredondo would continue to be paid while on leave.

Col. Steven McCraw, director of the Texas Department of Public Safety, told a state Senate hearing on Tuesday that Arredondo made "terrible decisions" as the massacre unfolded on May 24 , and that the police response was an "abject failure."

Yet police officers armed with rifles waited in a school hallway for more than an hour while the gunman carried out the massacre. The classroom door could not be locked from the inside, but there is no indication officers tried to open the door while the gunman was inside, McCraw said.

McCraw has said parents begged police outside the school to move in and students inside the classroom repeatedly pleaded with 911 operators for help while more than a dozen officers waited in a hallway. Officers from other agencies urged Arredondo to let them move in because children were in danger.

"The only thing stopping a hallway of dedicated officers from entering Room 111 and 112 was the on-scene commander who decided to place the lives of officers before the lives of children," McCraw said.

Uvalde Mayor Don McLaughlin pushed back on McCraw's testimony casting blame on Arredondo, saying the Department of Public Safety has repeatedly put out false information about the shooting and glossed over the role of its own officers.

McLaughlin called Tuesday's Senate hearing a "clown show" and said he heard nothing from McCraw about state troopers' involvement, even though McLaughlin said their number in the school hallway at points during the slaughter surpassed that of any other law enforcement agency.

Delays in the police response as the shooting was happening has become the focus of ongoing investigations and public outcry. Law enforcement has at times offered confusing and sometimes contradictory details and timelines that have drawn anger and frustration.

The Uvalde City Council on Tuesday voted unanimously against giving Arredondo — who is a council member — a leave of absence from appearing at public meetings. Relatives of the shooting victims had pleaded with city leaders to instead fire him.

"Please, please, we're begging you, get this man out of our lives," said Berlinda Arreola, the grandmother of Amerie Jo Garza, a 10-year-old who was fatally shot in the attack.

Sen. Paul Bettencourt told the state Senate hearing that Arredondo should have stepped down straight away.

"This man should have removed himself from the job immediately because, just looking at his response, he was incapable of it," Bettencourt said.

Arredondo and his lawyer have declined repeated requests for comment from The Associated Press and did not immediately respond to an inquiry Wednesday about his leave.

Arredondo has tried to defend his actions, telling the Texas Tribune that he didn't consider himself the commander in charge of operations and that he assumed someone else had taken control of the law enforcement response. He said he didn't have his police and campus radios but that he used his cellphone to call for tactical gear, a sniper and the classroom keys.

It's still not clear why it took so long for police to enter the classroom, how they communicated with each other during the attack, and what their body cameras show.

Officials have declined to release more details, citing the investigation.

Arredondo, 50, grew up in Uvalde and spent much of his nearly 30-year career in law enforcement in the city. He took the head police job at the school district in 2020 and was sworn in as a member of the City Council in a closed-door ceremony May 31.

That was 2019, and the former congressman was running for president when he declared during a debate, "Hell, yes, we're gonna take your AR-15," weeks after a gunman targeting Mexican immigrants killed 23 people at a Wal-Mart in O'Rourke's native El Paso.

Last week, following the massacre of 19 elementary school students and two teachers by an 18-year-old man with an AR-15-style rifle in Uvalde, Texas, O'Rourke — now campaigning for governor — again briefly seized the national political spotlight. This time, that meant crashing the news conference of the man he wants to unseat, Republican Greg Abbott, and declaring — in a moment subsequently viewed widely online — that the carnage was "on you."

It didn't work in 2019. O'Rourke's debate declaration won him praise from other Democrats on stage and a fundraising bump. But he dropped out of the race barely six weeks later.

It's too early to tell what will happen in the governor's race, but the shooting has already affected both parties. Abbott canceled his planned visit to the annual National Rifle Association meeting to remain in Uvalde. Also skipping it was Republican Texas Sen. John Cornyn, who is among those negotiating with Democratic colleagues on strengthening background checks and "red flag" laws allowing authorities to remove firearms from those determined to be a danger to themselves or others.

"I think it felt cathartic for a lot of people that maybe might have been on the fence," said Abel Prado, executive director of the Democratic advocacy group Cambio Texas. "It gives you, 'At least somebody's trying to stand up and do something, or at least say something.'"

Supporters hope O'Rourke recaptures the magic that saw him become a national Democratic star and nearly upset Republican Sen. Ted Cruz in 2018. But since then, O'Rourke's White House bid fizzled, former President Donald Trump easily won Texas in 2020 and Democrats who had hoped to flip scores of congressional and legislative seats in the state that year lost nearly every top race.

A Democrat also hasn't won Texas' governorship since 1990, and, just last year, the state loosened firearm restrictions enough to allow virtually any resident age 21 and older to carry guns without a license. Abbott signed that law alongside NRA CEO Wayne LaPierre and the group's president, Carolyn Meadows.

Of course, the domination of guns in Texas culture has long predated the law. Abbott once tweeted his embarrassment at his state lagging California in gun sales, and Cruz is fond of saying, "Give me a horse, a gun and an open plain, and we can conquer the world." Former Republican Gov. Rick Perry cruised to reelection in 2010 after using a laser-sighted handgun to kill a coyote while jogging.

Mass shootings are similarly not new in Texas. Tuesday's massacre in Uvalde and the El Paso killings followed a mass shooting at Santa Fe High School outside Houston that killed eight students and two teachers in 2018, and a church rampage in Sutherland Springs that left 26 people dead, including an unborn child, the year before.

Former Texas Land Commissioner Jerry Patterson, a Republican long famous for carrying multiple guns nearly everywhere he went, said O'Rourke's most ardent supporters will be "even more determined to vote for Beto" after his confrontation with Abbott.

Still Patterson said the clash could backfire, alienating otherwise potentially sympathetic swing voters who might think O'Rourke was putting on a self-serving show.

"Sometimes your method overwhelms your message, and his method gutted whatever benefit he might have accrued," said Patterson, who, as a state senator, wrote Texas' original, 1995 concealed handgun law allowing Texans to take firearms more places than nearly anywhere in America at the time. Abbott hasn't mentioned O'Rourke much since the shooting but answered questions about possible new state gun limits by slamming high crime rates in cities primarily run by Democrats.
