Cliveden House in Berkshire�

Located just an hour outside of London this stunning Victorian mansion was built in 1851 and has served as home to both the second Duke of Sutherland and the American millionaire William Waldorf Astor. Beaverbrook in Surrey

Originally built in 1866, Beaverbrook derives its name from its most well-known resident, Lord Beaverbrook, a publisher, politician and former Ministry of Aircraft Production for Britain during World War II.�

In 2011, his home and two of the surrounding buildings were transformed into a hotel and restored to reflect the period when the politician would have lived here. Artwork abounds in and outside of the home, including a sculpture of the British single-seat fighter aircraft known as a Spitfire, which Beaverbrook doubled the production of during WWII. There�s also a spa, four restaurants, a private cinema (purported to be the first home cinema in Britain),�and an activities program that includes a survival skills academy.

The Grove in Hertfordshire

The history of The Grove dates back far before the construction of the beautiful Georgian manor that houses the present-day hotel. Archeologists have found artifacts on the grounds dating to 3000 BC.

Formerly the home of the Earls of Clarendon, the interior of the hotel is quite modern. Even so, there are plenty of activities here to transport you to a bygone era. Chef John's Cassoulet

Cassoulet takes a lot of time and ingredients (some hard to find) and uses lots of pots and pans. So why make it? Thats easy. Cassoulet is one of the most delicious dishes youll ever have. Plus, its great for honing your observational skills, since no two cassoulet are the same, and the times I give are only a guide.

Chef John's Cassoulet Ingredients

  • 1 pound Tarbais beans, or other white beans, soaked overnight

  • 3 quarts seasoned chicken stock or broth

  • 4 ounces pancetta, cut into 1/4-inch dice

  • 2 bay leaves

  • 1 teaspoon black peppercorns

  • 6 sprigs thyme

  • 6 unpeeled garlic cloves, cut in half

  • Reserved bones from duck confit and pork, if available

  • 12 ounces fresh pork shoulder or chop, cut into 2-inch pieces

  • Salt and freshly ground black pepper

  • 1 tablespoon vegetable oil

  • 1? pounds Toulouse sausages, or other garlic pork sausage

  • 2 duck leg confit

  • 1 cup diced onion

  • cup diced carrot

  • cup diced celery

  • cup tomato paste

  • cup white wine

  • 1 teaspoon salt

  • 2 cups plain dry bread crumbs

  • cup chopped Italian parsley, plus more for garnish

  • 2 tablespoons rendered duck fat

  • 2 tablespoons melted butter

  • 1/4 cup cooking liquid

How to Make Chef John's Cassoulet

  1. Rinse soaked beans and drain.

  2. Pour broth into a large pot. Add chopped pancetta, bones from duck confit, and the drained beans. Tie bay leaves, peppercorns, thyme sprigs, and garlic into a small square of cheesecloth to create the bouquet garni; add to the pot. Stir. Bring to a simmer over high heat; skim foamy scum that forms, if desired. Reduce heat to low until beans are almost tender, 30 to 45 minutes.

  3. Sprinkle pork pieces with salt and pepper. Heat oil in a skillet over medium-high heat; brown the pork pieces, 3 to 5 minutes. Transfer to a bowl. Add sausage to the skillet and cook in the same oil, turning until nicely browned on all sides, 3 to 4 minutes. Cut sausages in half and transfer to bowl with pork pieces.

  4. Remove fat and skin from duck confit and add them to the same skillet. Cook over medium heat until fat is rendered, about 3 minutes. Transfer all fat and browned pieces from the skillet to a mixing bowl. Add melted butter. Stir in bread crumbs and chopped parsley; stir until mixture looks like damp sand. Mix in about 1/4 to 1/2 cup broth.

  5. Preheat oven to 350 degrees F (175 degrees C).

  6. Place onions, carrots, and celery in the same skillet used to brown the meats; add pinch of salt. Cook and stir over medium heat until onions are translucent and mixture turns golden, 5 to 7 minutes. Stir in tomato paste; cook and stir until tomato paste starts to caramelize and stick to the bottom of the pan, 3 or 4 minutes. Pour in white wine; cook and stir until most of the wine evaporates, 5 or 6 minutes. Remove from heat.

  7. Drain beans over a large bowl to retain all the cooking liquid. Remove bones and bouquet garni.

  8. Place drained beans in large shallow baking dish or cast iron skillet (about 12 inches in diameter and 3 inches deep). Stir in cooked vegetables and about 1 cup broth. Add pork pieces and distribute evenly among the beans. Top with the shredded duck confit. Nestle the sausage halves into the bean mixture.

  9. Ladle cooking liquid into the baking dish until beans are nearly submerged. Spread bread crumb mixture evenly over the top but dont press into the liquid. Use your fingertips to make gentle indentations on the crumb surface for better browning.

  10. Bake in preheated oven until most of the liquid has been absorbed, about 2 hours. Remove from oven and create a small "well" in the center of the cassoulet crust. Ladle about 1/2 cup of the cooking liquid (or as needed) into the well to rehydrate mixture. Use a fork to gently poke into the cassoulet to ensure the liquid is fairly evenly distributed but try not to disturb the crusty surface.

  11. Continue baking until cassoulet surface is crispy and caramelized, the meat is fork tender, and the beans are creamy and tender, about 30 to 45 more minutes.

  12. Serve in large bowls with a spoonful or 2 of hot cooking liquid. Top with chopped fresh parsley.

Chef John's Cassoulet Reviews

  • This was wonderful Served for a French wine tasting dinner. Expensive and time consuming, but so worth it Wish I could have found more authentic sausages, but found Aidells garlic and gruyere, which seemed fine. Great company dinner, as it is hands off towards the end. I added a bit of garlic to the duck fat/cracklings to add to the bread crumb mixture. After simmering the bacon in the stock, I removed it and did not add to the dish, as all flavor had been cooked out. Had extra duck stock and pork stock from the freezer to add to the bean cooking liquid. Cant go wrong with extra flavor. Not too salty at all.

  • It took a couple of attempts to dial this in. I made the duck confit as a separate event and had it in the freezer so that helped but it was still a lot of steps but worth it.

  • This is a complex recipe and I learned a lot I used flageolet beans which are smaller than Tarbais, so I kept an eye on them and reduced cooking time. Substituted browned boneless chicken thigh chunks for duck confit (sadly), but used the bones from chicken and pork chop in the cooking broth. The crumb topping is amazing, but baking the cassoulet uncovered left mine a bit on the dry side despite ladling in more liquid at the halfway point. (I did halve the recipe so mine wasnt as deep). Next time I might cover for the first half of baking, then uncover to finish because the carmelization of the crust is just sensational. Thank you again, Chef John

  • Rock star recipe and yes i used every pan in the kitchen. The local butcher/sausage maker provided the sausage on request. It makes a huge difference. Make the stock in advance, it will save you time and its always good to have a good stock in the pantry.

  • I loved everything about this recipe What I loved the most is that it extracts and utilizes every bit of flavor from every ingredient and method possible. Bones from the confit? Fat and skin from the confit? Juice from the beans? All utilized to bring every bit of flavor into this dish. Is this a simple preparation? Not even close But the challenge of it yields such amazing results. This recipe is something every budding home cook should try and then do their best to master.   • This was my first time making cassoulet and I was very nervous. The ingredients are expensive and the process is time consuming. That being said, it was worth it I doubled the recipe and served it to 12 friends (who dont mind being my test subjects for new recipes) and it was a huge hit. I made the recipe pretty much as it was written. I did borrow a few ideas from a recipe provided by Dartagnan, I made the confit of duck legs per a recipe from Dartagnan. They were fantastic, plus the process provided me with an abundance of duck fat to be saved and used for other purposes. I used Tarbais beans (which were so creamy and delicious). When I cooked the beans, in addition to the seasonings, pork butt and pancetta I added the duck leg bones. Grab every little bit of flavor where you can, right. That recipe had me put the pork butt and pancetta in with the beans. The meat was distributed well throughout the dish. The dinner was on a Friday evening so I started the recipe early (Sunday for the duck legs, Tuesday for the beans and ragu, Wednesday to construct the cassoulet). I do think the additional time to let the flavors meld was a positive with the flavor of the dish. In addition, it gave me a good opportunity to skim off any fat that collected on the top of the dish. The crumb topping was great. I did use the duck skin to make duck bacon bits created by crisping it. OMG what a pop of flavor. I think the recipe is absolutely great as is. I will make it

  • Wow. What an ambitious recipe Couldnt find duck confit, so I substituted sauted chicken thighs, but I also used Rancho Gordo cassoulet beans, which I believe really helped make up the ingredient quality differential. This dish is truly a labor of love, but its worth it because all your care is returned once its done. This is something Ill add to my forever repertoire for sureits the perfect way to warm up after a chilly day.

  • We went to the south of France this summer and when we tried the cassoulet I knew I had to make it at home. Im so glad I tried chef Johns version because it was AMAZING. The only substitution I had to use was turkey legs in place of the duck confit as I could not find duck legs anywhere. I made the turkey confit using duck fat and it turned out really well so if you cant find duck try the turkey. Be sure to follow the steps closely and monitor the salt levels as you go. This took me a long time to make the first time but I anticipate a shorter prep time next time since I wont have to read the recipe and steps so many times Make this if youre up for a challenge Bon apptit

Curry Pumpkin Soup

This is a wonderfully soothing and savory soup - a perfect choice for a holiday party or dinner. Adjust the amount of curry and soy sauce for spiciness. Adjust the amount of half-and-half, or substitute heavy cream or milk for varying levels of creaminess. Also, you can add sauteed chopped sweet onions with the first three ingredients (this works best with a creamier version).

Curry Pumpkin Soup Ingredients

  • 2 tablespoons pumpkin seeds

  • 2 tablespoons butter

  • 3 tablespoons all-purpose flour

  • 2 tablespoons curry powder

  • 4 cups vegetable broth

  • 1 (29 ounce) can pumpkin

  • 1? cups half-and-half cream

  • 2 tablespoons soy sauce

  • 1 tablespoon white sugar

  • salt and pepper to taste

How to Make Curry Pumpkin Soup

  1. Preheat oven to 375 degrees F (190 degrees C). Arrange pumpkin seeds in a single layer on a baking sheet. Toast in preheated oven for about 10 minutes, or until seeds begin to brown.

  2. Melt butter in a large pot over medium heat. Stir in flour and curry powder until smooth. Cook, stirring, until mixture begins to bubble. Gradually whisk in broth, and cook until thickened. Stir in pumpkin and half-and-half. Season with soy sauce, sugar, salt, and pepper.

  3. Bring just to a boil, then remove from heat. Garnish with roasted pumpkin seeds.

  • I bought a pumpin at the farmers market for making pie & seeds, but found this recipe on a "quick meal" search & thought, "What the hey? Sounds healthy & the ratings are great." SO>>> I followed other reviewers & added about 1/4 Cup of food processed onions to the bubbling butter, then did the recipe as followed. Added about 1 cup of shredded chicken to it & used Coconut milk instead of the 1/2 & 1/2, AND I used Indian Curry which made it near impossible for my children to feed their bodies so wonderfully as my hubby & me Made wheat rolls & topped the soup with the seeds & we were so satisfied, in & out This is a great, warm up your insides & get your nose running soup So good for you too Thank you for this addition to my fave site Now this recipe card sits in front row in my soup slot in the recipe box

  • This soup is ridiculously good. I made this to use up some unused Christmas dinner ingredients, and I think its going to be replacing my current pumpkin soup recipe I made a few changes: I added one chopped yellow onion, and about 2 tablespoons of minced garlic to the curry saute, and I replaced the vegetable stock with chicken stock and the cream with evaporated milk because I had it on hand and wanted to use it up. Im sure this soup is great without any changes though I also added a pinch of ginger. Served it with some warm crusty popovers. Delicious Thanks so much for the recipe

  • I have done this recipe with the onion and half-and-half a couple of different ways. I have chopped the onion to add texture and I have also thrown it into the blender so it was creamy. I like it creamy and my husband prefers the onions chopped. Either way you go this recipe is a winner and so easy you will not believe it. I am so glad I tried this in October. I will be making this a lot and we will be able to eat this warming dish all winter long I think it is substantial enough for a main dish. Wonderful as is

  • Im rating medium because I know this can be so much better. my fiancee makes a soup similar to this, but it definitely uses coconut milk instead of cream, which is so much better for you, and fish sauce instead of soy sauce. both substitutes are actually oriental ingredients instead of americanized versions. also if you use a butternut squash you dont need to add the sugar as its naturally sweeter than pumpkin.

  • FABULOUS.. I cant believe I made something so great tasting and easy to prepare. I used chicken broth instead of vegetable and I used heavy whipping cream instead of half and half. The way to give it a kick in flavor is either to add more curry or just more salt. I also put in a little more sugar and it really tasted fantastic and I will definitely make this again....its an awesome "comfort" food on a cold fall afternoon.

  • The soup is great Instead of canned pumpkin, I used fresh pumpkin, baked it for 30 minutes the night before. The baked pumpkin turned out to be so soft that I mashed the it using a laddle instead of a blender. I also used curry paste and added a bay leave to the stock as recommended. My friends LOVE the soup, will make it again, very soon

  • I served this recipe to an entire party of people... it had a very creamy and mild flavor so I added extra curry and soysauce. May be good to try it with the onions option in the description. Everyone really liked it, although some spiced it up a bit on their own, a little seasoning salt and some crushed red pepper for the ones who really wanted spice. Great over-all

  • Very good recipe. For my tastes, it was a bit lacking in the spicy-ness, so I added a little green curry and pepper. yummy.

  • Simply fantastic. Better with fresh pumpkin than with canned, but the canned stuff is obviously so much easier. I used onions and theres no way Id go without, I also added some Garam Masala which just kicked it to an even more amazing height. I tried it before I added the masala though, and it was divine. I will make this often, there is no doubt.

  • I served this at a dinner party and it was a big hit. And it couldnt have been easier to make I used canned pumpkin and it turned out wonderfully.

  • I love the simplicity of this recipe, however I omit the sugar and add a few other spices like red pepper, chili powder and paprika as well as garlic salt to make it a savory soup. I still love the curry. I change out the vegetable broth with chicken broth. This is the best recipe for large groups. Instead of garnishing with pumpkin seeds, I like to change it out with either toasted walnuts, sauted mushrooms or crumbled bacon (or all three). It is great to offer your guests a choice of garnishes - especially if you have picky eaters, or ones on special diets.

  • I tried so hard to like this - but I just didnt. And to my surprise, it was Hubs who I thought wouldnt like this and he did It was different and interesting, Ill give it that. But I think it was overly "curried" and that did it in for me. Hubs said for him it was the curry that made the "pumpkin" part of this soup edible I used chicken broth rather than vegetable broth - I never have vegetable broth on hand and know I would prefer the chicken broth anyway. I left out the sugar - pumpkin is sweet enough. Its very rich and again, too curried, so a little goes a long way. Therefore, I have to agree with Hubs that this would be good as a "soup shooter starter," as a complement to the rest of the meal.

  • Good recipe, but bland for our familys tastes. My add-ins: I sauteed 1/2 a minced onion, 2 minced garlic cloves, and 1/2 a minced apple (I had Jonagold) in the butter, added cumin and curry and a pinch of cinnamon to the flour and then mixed in as directed. Used low-sodium chicken stock in place of veggie, and for the cream element I used a mixture of half fat-free half and half and light coconut milk. At the end, added soy sauce as directed, but needed extra brown sugar (definitely would have used less if Id had dark instead of light), a few sprinkles of cayenne and an extra tablespoon of curry. At that point I loved the taste, but wanted some texture. I looked through my cupboard and found 2 cans of sliced potatoes and a large can of chickpeas. I drained and rinsed them well, sliced the potatoes in half, and added the whole can of chickpeas, and it was absolutely delicious, warming and filling. A little went a long way, so I had a bunch to freeze for the season. Next time I will try a mixture of apple cider and coconut milk for the cream part, and add a bay leaf. Also some fresh herbs next time... not sure what yet.

  • I didnt bother with the seeds but this was amazing. I used 1 cup half & half and a half cup of skim milk, followed everything else exactly and it turned out perfectly rich and creamy and delicious. I will definitely make this again

  • Simple and tasty. Definitely add ginger and garlic at some point. A bit of apple juice or crushed apples will sweeten it if you like a sweeter pumpkin soup. Keep a can of pumpkin in your pantry and whip up a great soup in minutes.

  • I thought this was flipping deeeelicious. My husband and boys thougth it was SO gross. They dont like squash soups- should have known.I used 1 TBS and 1 TSP of curry powder and subbed heavy cream for the 1/2 and 1/2. AWESOME-

  • The base of this soup is excellent, but it needed much more flavor to suit my taste. I love spice, and I needed to add more red pepper flakes, curry powder, pepper, and cinnamon to make it delicious. Also, I dont think it is supposed to be a mild soup, but the recipe as is tasted too bland. Just a splash of tabasco and 1/4 cup vinegar added at the end of cooking made ALL the difference in the world. I would absolutely recommend this soup to anyone, but dont be afraid to flavor it to really make it shine.

  • I have been making this soup for years now. It has become one of the Fall Favorites in our house. I always add a diced onion to add more flavor to the soup. Since the recipe makes a large amount, I always freeze about half. It freezes well and is just as good reheated as it is fresh

  • This is a fantastic recipe...with a few changes. I added finely chopped onions to the butter before adding the flour/curry powder. I also substituted coconut milk (1 can) for the half-and-half. I served this to a group of 15 teens, 2 college students, and 4 adults. It was an absolute hit One suggestion I got from 2 people was that itd be great served over rice...another was to add raisins. It really does only take about 20 minutes to make. Definite keeper recipes. Thank you

  • Love, love, love, love, love Easy, quick and delicious This soup had wonderful rich flavor with a nice kick at the end. It was devoured. I made it for a party I was going to and served it as soup shooters. I put a small dollop of sour cream and then the onions as a garnish. They were a huge hit. It couldnt be easier to make The only change I made this time around was to use brown sugar instead of the white sugar. I like the deeper, more complex flavor of that sweetener better. I also only roasted the pumpkin seeds for 5 minutes total. Past episodes of billowing clouds of black smoke from burnt pumpkin seeds trained me to watch them carefully. Carmelized onions also make an excellent topping for this soup.

  • Absolutely delicious I am eating it right at this moment, and I may need to go back for a second bowl. I love pumpkin, but I dont like sweet soups. I also love curry, but I cant handle excessive spice. This recipe let me indulge both I made some changes, and I also halved the recipe. I added a bit of nutmeg, ginger, and fresh garlic for extra flavor. At the suggestion of other reviewers I added yellow onion right after the flour and spices, and since I wanted something with more texture, I also chopped up a couple of baby carrots and a celery stalk. I also used brown sugar instead of white, and just added about a tablespoon to taste. I noticed the sugar really brought out the pumpkin flavor, so its worth adding. The seeds really gave it a nice nutty flavor, although I find them a bit hard to chew when theyre wet. Will definitely make this for family Edit to add: I made this again and thought I would try coconut milk instead of cream, but I didnt realize we only had light coconut milk. It didnt turn out nearly as creamy and delicious as it should have. If you go for coconut milk, definitely dont use the light

  • I sauteed half a yellow onion and 1 tablespoon fresh minced garlic until almost caramelized and added it to the soup. I subbed coconut milk for the half and half and I also added an additional 2 tablespoons of sugar. I used my immersion blender to puree it until it was creamy and smooth. Very good with crusty bread

  • This was good, but better with coconut milk as a substitute for the half and half cream, and thai curry paste as a substitute for the curry powder. I used a little more sugar. Next time I will add onions processed in a good processor as suggested by others.

  • This was really good, although I had to admit that I used the recipe more as a general guideline than following it perfectly, but it still turned out really well. Heres what I did: Sauteed onion in 1T butter until soft. Added garlic and sauteed for 1 min. Added a spice mixture of 1T curry powder, 1/2t ground coriander, 1/2t ginger, 1/2t nutmeg, 1/2t cinnamon, 1/2t turmeric, 1/2t red pepper flakes and sauteed for 1-2 min. until fragrant. Added 1T tomato paste and sauteed until lightly browned (basically, I made the base of a curry). Then added 1 can of diced tomatoes, 2 cans pumpkin and 4 cans chicken broth, about 1T soy sauce and brought to a simmer. I added 1C of lentils (measured dry) to make it more substantial and add some protein (saw another recipe that did this). Something was still missing. Added 1T brown sugar and some salt, which improved the flavor immensely. I was hesitant about this because I was trying to make it healthy, but the added sugar was worth it in this case. After looking at some other recipes online, I cut up a McIntosh apple and added it in for more sweetness. It was really good, a little spicy/sweet/savory all at once. I think a little bit of coconut milk would have made it over-the-top fantastic, but I didnt have any and it would have made it significantly less healthy. Simmered for 20 min until the lentils were cooked (I had boiled them separately for a few minutes while I was making the curry base). Turned out great

  • After reading the recipe, and the reviews, i decided to saute finely chopped onion and finely grated fresh ginger with the butter, before adding the rest of the ingredients. I used House Curry cubes instead of curry powder. And lastly drizzled some coconut cream before serving. I didnt add any soy sauce. Im asian, and soy sauce is not something we add to curry, thats why i omitted it. Got lots of compliments on the soup. :) tks for the recipe

  • 4.5 stars - I thought this was a great spiced pumpkin soup. I followed other suggestions and added in some minced onion and garlic (sauteed at the beginning to soften), substituted coconut milk for the half-and-half, and omitted the soy sauce but added in a little bit of cumin.This made a nice consistency, well flavored soup. Could potentially use a bit less curry powder, but I suppose it depends on how much you like the flavor. Proper salt and pepper seasoning really made this soup for me. Would definitely make again

  • This was good but in my opinion, the soy sauce way overpowered the curry flavor. Ill make it again but next time cut way back on the soy or leave it out altogether. Loved the toasted pumpkin seeds on it. I did them in a dry skillet instead of the oven and they were ready in a flash.

  • The original recipe is delicious without any changes. It has a rich, warm flavor... a great comfort food for a brisk fall day or cold winter day. To make this gluten free, substitute corn starch for the flour, and make sure the broth is gluten free. To use fresh pumpkin instead of canned, gut and cut a 3 lb sugar pumpkin into 1" x 2" chunks, drizzle with veg oil, and toss to coat. Roast 15 minutes in a grill pan, on the grill. Cool and peel the skin off. Add the chunks instead of canned pumpkin, and use a stick blender (mine is a kitchen aid and it worked great) to puree the soup.

  • Used milk since thats what I had on hand. Be generous with salt and pepper and this is an easy tasty soup

  • I had to substitute 2% milk for the half and half, I omitted the pumpkin seeds, I used fresh pumpkin puree instead of canned, homemade vegetable broth instead of canned, and I added some Worcestershire sauce in addition to the soy sauce. I thought it turned out great I will make this again and again Next time I will be sure to get some half and half or heavy cream because I think that would give the soup a much better flavor and texture. I also plan to steam and puree some cauliflower (or possibly add some other type of squash like butternut) to add to the soup along with some extra vegetable broth so its not too thick. I think the addition of the cauliflower or squash would give it some more dimension.

  • I enjoyed this recipe, but I did need to add a bit more sugar, a bit of pumpkin pie spice and some cumin to give it a little more flavor. I used fresh pumpkin (3 1/2 cups worth) instead of canned. I served with a dollop of sour cream on top and saltines. I really liked it, but the rest of my family had mixed reviews on this. Next time I make it I may add some diced potatoes, carrots, and chicken for them.

  • I made this for a change of pace from chipotle pumpkin soup, which I make at least once a month. This recipe is good. I skipped the roux, as it isnt necessary; I just adjust the amount of liquid to achieve the desired thickness (used about 4 cups of total liquid). I used almond milk in place of the half-and-half and skipped the sugar, as it just didnt seem like it needed it. I like things spicy, so I added cayenne and crushed red pepper, as well as freshly ground black pepper. This is great topped with a spoonful of reduced fat sour cream. Nice change of pace from my usual soup. Another great thing is that it can be on the table in 15-20 minutes from start to finish, so you have a from scratch soup in about the same time that it would take to make canned/premade.

  • Its unfortunate that I have to rate the recipe to leave a review, because I made too many changes to the original for me to really be able to give a fair rating... but since I have to rate, Id put it solidly in the middle. Some of the changes I made were necessary (only had 13.9 oz pumpkin), others were due to personal preference (do not like things too spicy). Here are the changes I made: halved the recipe; used turkey stock instead of veggie broth; used approx. half amount of curry (still plenty spicy for me); did not add salt. Next time I will mince up half a medium sweet onion (for a half-batch of soup) in my food processor, and saute that with the butter. Too many changes to really rate the recipe as written, but I think the original is a great base and lends itself well to modification.

  • After reading other reviews, I used coconut milk; I also substituted soy with tamari (smoother), then added a bunch of sliced fresh mushrooms, which was delicious. Next time I may saute some tofu and throw that in. We thought this would do well over rice if you cut back on the broth and add other veggies. Its a great recipe, which I think would work well a variety of ways. One thing to keep in mind - it may be too spicy for some. We liked it and out spice-loving kids did, too, but you have to like curry.

  • This was exceptional. I made it with half coconut mix you get from the alcohol aisle in the supermarket and half cream. I also added half an onion and a clove of garlic which I sweated before I added the flour. I used chicken stock and apple juice instead of vegetable stock and i added crab meat.   • Love this recipe It is now part of our Thanksgiving menu but we start making in October because its so good I add a chopped onion, 1 clove minced garlic and 1/4 tsp ginger when melting the butter before I add the flour. Its not as smooth as it would be without these added ingredients but it still works (sometimes I add a little butter if it seems too thick.) Started with a half a small white onion in the butter before adding the flour to make the roux and then added more onion powder before serving. Triple Orange Sour Reviews

  • What a great creation and you dont have to wait until summer to enjoy it. I had a bunch of lemons and limes, so I made my own sweet and sour mix. Heat 1 1/2 cup sugar and 1 1/2 cup water until sugar is dissolved. Once cooled, add 1 cup lemon juice and 1 cup lime juice.

Spaghetti with a Kick

Ive been modifying this recipe over the years and this current rendition has become a real crowd-pleaser. Its quick, easy and a nice change of pace from regular spaghetti.

Spaghetti With A Kick Ingredients

  • 1 pound spaghetti

  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 1 (16 ounce) jar spaghetti sauce

  • 1 (15 ounce) can black beans, rinsed and drained

  • 1 (15 ounce) can kidney beans

  • 1 cup sweet corn kernels

  • 2 teaspoons ground cumin

  • 1 dash hot pepper sauce

  • salt to taste

  • ground black pepper to taste

  • 2 tablespoons grated Parmesan cheese

How to Make Spaghetti With A Kick

  1. In a large skillet heat cook the onion in the olive oil until tender. Add the spaghetti sauce, black beans, kidney beans, corn, and mix well. Stir in the cumin, red pepper sauce, salt, and ground black pepper. Simmer for 15 to 20 minutes.

  2. Meanwhile, in a large pot with boiling salted water cook spaghetti until al dente. Drain.

  3. Toss pasta with spaghetti sauce. Serve with freshly grated Parmesan cheese.

  • While I love the flavor of beans and corn, and the cumin was a great touch, this recipe was not a hit in our house. My husband (ever the eater) did not finish his plate at dinner that night or for leftovers at lunch the next day. My sister also said she would eat it but would not make it, request it, or really even be happy about it being cooked. My opinion, the balance between pasta and veggies is good. This way you can each more than you should without feeling too bad since it is about half veggies. But there is something that is just not right about the flavor. Oh yeah, it is really filling...which is good. Good to try once....but not to repeat.

It does make a lot though, so I put the leftovers in hot, sterilized jars and put them in the oven at 275 for 20 minutes with lose fitting lids. once out of the oven you can tighten the lids (carefully). Once the lid seals youve got extra canned sauce for future use. It works really well, and youll get to enjoy this yummy sauce again, and again without the added effort of making it. =)

One problem was the recipe calls for 16 oz jar of spaghetti sauce and all I had were 24 oz jars. So I adjusted the cumin and hot sauce accordingly. But it still came out more subdued than I like it. So next time Ill increase both cumin and hot sauce even more. And Ill probably throw in a pinch of cayenne as well.Colorful appearance was great; texture was great. It was just the mild flavor that brought it down for me.

I would recommend NO Parmesan cheese; with traditional sauce it is wonderful, but with this "Southwest" flavor, the Parmesan cheese did not blend so well.

Chicken Breasts Pierre

One of my husbands favorites. Ive been making this for over fifteen years, and hes not sick of it yet Serve with pan sauces, crusty French bread and a tossed green salad.

Chicken Breasts Pierre Ingredients

  • 6 skinless, boneless chicken breast halves

  • cup all-purpose flour

  • teaspoon salt

  • 1 pinch ground black pepper

  • 3 tablespoons butter

  • 1 (14.5 ounce) can stewed tomatoes, with liquid

  • cup water

  • 2 tablespoons brown sugar

  • 2 tablespoons distilled white vinegar

  • 2 tablespoons Worcestershire sauce

  • 1 teaspoon salt

  • 2 teaspoons chili powder

  • 1 teaspoon mustard powder

  • teaspoon celery seed

  • 1 clove garlic, minced

  • ? teaspoon hot pepper sauce

How to Make Chicken Breasts Pierre

  1. In a shallow dish or bowl, combine flour, 1/2 teaspoon salt and ground black pepper. Coat chicken breasts with flour mixture. Melt butter in a large skillet over medium heat, and brown chicken on all sides. Remove from skillet, and drain on paper towels.

  2. In the same skillet, combine the tomatoes, water, brown sugar, vinegar and Worcestershire sauce. Season with salt, chili powder, mustard, celery seed, garlic and hot pepper sauce. Bring to a boil; reduce heat, and return chicken to skillet. Cover, and simmer for 35 to 40 minutes, or until chicken is tender, no longer pink and juices run clear.

  • This is my kind of dinner Easy and a unique, yummy flavor. I thought it might be just a bbq sauce; but it is much more... It reminds me a little of Cuban food.Some of the reviews said this was too sweet. My guess is it was their stewed tomatoes. This was not a real sweet dish with PLAIN DICED CANNED TOMATOES(instead of stewed)like I used. The idea of adding onion (esp. RED onion)sounds, to me, like it would be great; but I dont think mushrooms would work with this(and I love mushrooms). I think, a mix of sliced red onion,and red, yellow and green peppers (in the last 15 min.) steamed in the sauce, would compliment this sauce better; although the recipe is perfect just AS IT IS.I made with white rice and stir-fried, garlicky, fresh-cracked peppered green beans to make a meal. Although, any starch (noodles, rice etc.) and any green vegetable would be excellent with it. It made about a cup of sauce with flavorful chunks of tomato that we spooned over the chicken and rice. I made only four breasts, so I will double sauce for more servings. Gotta have enough of the sauce to add to the riceNancy, you said your husband hasnt gotten sick of this in 15 years... mine liked it a lot too.   • I would rate this even higher - these are ingredients you normally have on hand or they can easily be substituted. I scaled it to three using the exact measurements provided when scaled down. As a preference I used canned diced tomatoes, chicken broth (had it left over in the frig - water would have been fine), cayenne pepper since I didnt have hot pepper sauce. Followed other reviewers suggestions and added a small onion sliced into rings - I would never leave that out now. Also had some leftover corn in the frig which I threw in at the end. I pounded the breasts so they would be the same thickness, cooked them in 25 min. and they were incredibly moist. Keep an eye on it when it simmers - I did have to add some more broth which was fine - it held its rich, spicy flavor and was great over the rice. Another keeper. Thanks Nancy.

(I did cut the chicken breasts in strips) I ran out of mustard powder so I used prepared mustard.It worked just as well.   • This recipe is one of our staples. We have been making it for the last year. We do make a couple changes though. We reduce the amount of chicken breast halves from six to two. Also, we cube the chicken. When the sauce and chicken is complete we pour the sauce and chicken over fresh steamed white rice. Yummy. This will yield 2-4 servings.

  • I always add a chopped onion to this too for great flavor and texture. 11/1/06: This was EX-cellent I reduced the chili powder to 1/2 the amount, used 1/2 the amount of water so that I could do the other half in WHITE WINE; the wine really made the recipe as weve since used it and forgotten the wine, and could tell the difference. An extra splash of Franks Red Hot Sauce doesnt hurt either I love the combination of flavors and using all of the somewhat unusual-together ingredients to get there.   • A fine and easy recipe. I agree with other reviewers that red wine for water and white wine for vinegar worked well. I also added fresh sliced mushrooms and sliced red onions once the simmering starts. This is such a flexible recipe that "approximate" measurements of the ingredients works fine. I little more or less of anything just gives you a different taste the next time.

  • This was good but not great. My husband really enjoyed it. Ill make it again because its so easy and will cut back on the chile powder. This tasted a little too much like chili. There wasnt much sauce either so if youre making 6 breasts, Id definitely double the sauce ingredients.

  • Phenomenal I would give it 10 stars if I could I changed very little, mostly to use my pantry items: I used 4 chicken thighs, large can of diced tomatoes, 1/2 cup vermouth for the water, and omitted the vinegar. I only adjusted the Worcestershire to 3 Tbsp to accommodate the larger can of tomatoes. The other spices & sugar were measured as specified.I added step 1.5: saute about 1/2 cup onions and 1/2 cup peppers in the chicken drippings, and toss in the garlic when the onions & peppers are transparent. Deglaze (wash down) the pan with the vermouth, stirring and boiling for a few minutes to incorporate any brown bits. Continue to step 2

  • I made this almost as directed except for a few changes. I skipped flouring the chicken (personal preference) and browned chicken breasts in butter and put them in a shallow roasting pan. Then I mixed the remaining ingredients in a bowl and poured that over the chicken breasts. I baked it uncovered at 350 degrees for 50 minutes and served with white rice.   • Excellent way to make juicy, tender chicken. I didnt dredge the chicken in flour, I just seasoned with salt and fresh cracked black pepper, then browned in a little olive oil. I took them out and sauteed half a white onion and about a teaspoon of minced garlic out of a jar with a little bit more olive oil. I then followed the recipe exactly except for adding a few red pepper flakes and some mushrooms. I served with a salad, steamed sweet potato, broccoli and yellow squash. Great, healthy meal And I have enough for dinner tomorrow

  • I used 14 of the salt called for, only 1 12 tsp of brown sugar and only 1 tsp chili powder. When mixing the flour, I added 14 tsp each of paprika, garlic powder, salt and pepper.   • Fabulous As per other reviews, I used diced tomatoes, and wine instead of water. I also doubled the sauce amount. Cant imagaine having enough of this relatively heathly reicped with out it. I have 5 kids, and everyone said how great this was. I served over rice, but know it would work well with spaghetti. Just to make it a tad healthier, I used Olive oil. After making this, I think the next time I will not dredge the chicken in flour. I made this in my electric skillet which is made with teflon so I even used less oil. This is a great recipe and where it is great the way it is, you can make your own little personnal adjustments and still get something great. Perfect with just a salad and the rice/pasta.   • This was OK but it just wasnt amazing. The chicken was ok on the outside but really dry inside. My hubby really liked it though. I followed the recipe as is except I substituted Worcestershire sauce with soy sauce and celery seed with celery salt. served it over rice or a choice of thin spaghetti noodles (which I liked better) Thanks for the recipe may try it again

  • Per some of the other reviews, I threw in some red onion with the melted butter and some red wine with the water. But I accidentally put in Cheyenne pepper instead of chili powder (I was thinking 2 teaspoons of red pepper was a lot)even with my faux pas it had great flavor although it practically burned my lips off. My brother-in-law (he likes the spicy stuff) LOVED it and took home all the leftovers. I cant wait to try it without all the heat

  • This was very good. Served over egg noodles with garlic toast. Made servings for 4 but still doubled the sauce. Very yummy. We like LOTS of flavor so just keep adding seasonings until I got it where we loved it. Used about 1/4 BOTTLE of hot sauce - YUM

  • This was surprisingly fantastic I didnt have stewed tomatoes, so I used diced, I dont have celery seed, and I upped the garlic to 3 cloves, but it was SO yummy The chicken was done just right, my kids ate it up, as did my husband I had to add 1/4 cup of water, because when I put the tomatoes in the pan when it was very hot, and boiled off a lot of liquid. Will be adding this to my regular recipe list :D

After the rave reviews...the whole family said dont make it again After all the prep...(I pounded the breasts for even cooking) the breading, the frying and then the cooking, I should have made a Parmesan or something. The taste of chili powder was overwhelming and would have been better suited to a chili type meal. Sorry, but this wasnt our cup of tea

  • I really liked it; it is very good. I cut the recipe in half for two people. I didnt have any celery seed so instead of using 1/2 teaspoon salt and a 1/4 teaspoon celery seed, I used 1/2 teaspoon celery salt. Also because I love tomatoes, I used one full 14.5 ounce can of diced tomatoes with the liquid in lieu of the 1/2 can and 1/2 cup of water. I wish I had more sauce though so maybe Ill add water or chicken stock next time. My husband LOVED it and that is quite a feat considering we have opposite tastes. Thats why Im giving it five stars.   • I give this a five star rating. A simple recipe that can be the foundation for so many variations. Right away, I sauteed an onion in the chicken pan. Instead of water, I used vermooth which is always a good liquid with chicken. I also had some summer squash that I threw in the pan. Next time I might add some green pepper. I see someone add soy sauce and that might be another twist. My only criticism is that I thought is was a little too sweet for my taste (kids would love it). I am going to try reducing the brown sugar a little to increase the tang factor. My dish turned out more beautiful than the photo. I would not hesitate serving to guests as it is easy, letting you prepare the rest of the dinner while the chicken bubbles.

  • I made this tonight for my husband and two small children. I served it with rice and brocolli. My kids didnt care for it but my husband and I loved it. Here are some changes I made; I used Italian stewed tomatoes, chicken broth instead of water, 1 teaspoon of brown sugar (too sweet otherwise), less salt in the sauce because I used celery salt instead of seed and after putting the chicken back in the pan I added enough water to cover the meat before simmering. The sauce on the rice was amazing. Since my kids arent crazy about it I might even add a little more of the hot pepper sauce next time to give it more kick but really it was great this way. I substituted 2 cans of petite diced tomatoes with liquid, didnt add the water and used, based on other reviews, 1 tablespoon of balsamic vinegar and 1 tablespoon of red wine vinegar. The flavor was awesome. I served it over wild rice as that is the rice my husband really likes.

  • I loved this recipe since i only needed to make 2 chicken breasts i had to scale back a bit, but it tasted soooo good. I did not have celery seed so i didnt add it and i used canned diced tomatoes with some liquid. I also made shell pasta with this. I took the chicken out of the pan and added some of the pastas water to thin a little and added the pasta to the sauce and served it with the chicken. Delicious

  • I actually created an account to warn people on this recipe. I have loved all chicken recipes Ive tried on here so far that have used tomatoes as the base sauce. Im always on the look out for a healthy and flavorful dish so I though this would be perfect. Wrong. This tasted like something that should be served at a bbq on a bun...I took the reviewers advise and added onions. This actually made it worse. The bbq taste does not mix well with rice either.

Its very flavorful, and my chicken was still very moist. My substitutions (only because thats what I had on hand are) - Chicken broth instead of water, Diced tomates & chiles instead of stewed tomatoes, Steak sauce instead of Worcestershire sauce, Ground Corriander insated of celery seed. Also I added chopped red onions, red bell pepper, and orange bell pepper.

It is so flavourful and the acid from the tomatoes help to keep the chicken very moist and tender.The couple of substitutions I made were simply because of a few things that were missing from my pantry.I used a can of diced tomatoes instead of stewed tomatoes, red wine vinegar instead of white, and 1/4 tsp celery salt instead of celery seed. (reduced the remaining salt)My husband loved it. I served it with a simple whole wheat pasta with sauteed veggies and the extra sauce from the chicken was delicious on the pasta as well.This one is staying in my recipe stash for sure.

  • Good recipe. My picky triplet daughters liked it and my husband LOVED it I recommend some of the tips in the highest rated review. The red onion is a must and I added green pepper and corn mid way through the simmering and it was awesome. My husband said it looked like a Santa Fe dish.   • This was pretty tasty. Spicy, but just the right level for us. Heres another way to make this that worked for me: Put all the ingredients in a bag and let it marinate for a few hours. Make a dish of rice and put the chicken on top. Put a tablespoon of flour in the bag and shake it all up. Then pour the marinade on top of the chicken and bake in the oven for half an hour. It solves the juice problem while flavoring the rice.

I cut the chicken into bite-size pieces before flouring and I served it over angel hair pasta because of what I read from previous reviews, and served the leftovers the next day over rice. The dish was tastier the next day and I liked it better over the rice. The chicken was nice and tender Would make again. Easy to prepare

  • My husband and I absolutely LOVE this recipe Its super easy to make and delicious. I make it once every 1-2 weeks. It goes great served over linguine, with the chicken cut into pieces before breading/browning. I just use a large ziploc bag and toss the pieces in there before browning.   • This is a good recipe... my husband and daughter really loved it. I cant say I "loved" it but I did like it a lot and, if youre contemplating making it, Id say go for it. I made suggested changes... I added a can of stewed tomatoes for more juice, and I subd red wine for water. Other than that I followed the recipe. I give 5 stars to things that I just LOVE LOVE LOVE so ill give this recipe 4 stars. Wish I could give 4 and a half. EDIT: I just ate the leftovers and boy, were they good I think my only problem w/this meal is that I expected something more Italian-ish tasting, mainly because of the picture and because everyone is serving it w/pasta. Personally (and I saw at least one other reviewer felt the same way) I think this would be better with mashed potatoes and thats what ill be making it with next time. Changing my 4 stars to 5.ANOTHER EDIT: I made this again, extra can of tomatoes only thing changed, served w/mashed potatoes and it ROCKED. YUM.

  • Wow, delish I only substituted 1/4 cup of red wine/1/4 water for the 1/2 cup water, and added in some chopped onions and green bell pepper. Served on top of basmati rice. My husband, a somewhat picky eater, loved it

  • Very, very, very tasty. I took some suggestions and substituted white wine for the water. I also found it easier to cube the chicken. I did not have celery seed or mustard powder on hand but it still was very tasty. Next time, I may use more sauce.

  • Now I see what all the rave reviews are about; this is fantastic I had chicken thawed but my cupboards were a bit bare so I searched for a recipe that required common ingredients that I have on hand and this was it. What a surprise; sounds simple but the flavour has depth. We had with pasta but this sauce will be good on rice or potato as well. This is going into the rotation for sure. I would even serve this to guests; it is restaurant quality. Thanks for sharing

  • Pretty good. Taste like watered down barbeque chicken. Troy loves this and request it pretty often. Usually add 1/2 diced onion. Sometimes I make with pork, but simmer for only 30 minutes then. Oh and double the sauce. Pretty much always serve with brown rice with sauce spooned over top. Only thing is its not as good leftover.

  • UPDATE: The second time I made this, I only used two chicken breasts, but sliced them into thirds so they were thin. I then dredged them in the flour mixture, dipped them in egg, and finished them off with Panko breadcrumbs. This made the chicken quick to cook and so crispy I left the sauce at the original amount, but next time Im going to double it. I cooked the sauce in one pan, chicken in another, and then just added the chicken with a quick stir to coat and served. That way the breading didnt get soggy. Huge hit ORIGINAL: This was a huge surprise for me. It has been sitting in my recipe box for a year, and I finally decided to try it. I was expecting an Italian-type dish, but was pleasantly surprised by the spicy Cuban undertones. My one year old couldnt get enough of this. I did use diced instead of stewed tomatoes, and garlic powder, since I had run out of normal garlic and didnt want to go to the store. I served it with rice, and the sauce was to die for mixed with the rice.

  • This is the first time Im writing a review here and its purely because this recipe is amazing. I added red wine as suggested by previous reviews and served over basil white rice and it came out great. This will remain in my recipe box for quick impressive dinners.

  • This is a really good recipe with one slight change. I prefer to cut up the chicken breast instead of them whole. Otherwise, the breast are pretty flavorless even though the sauce is awesome. I serve it over noodles. This is really easy to make and very flavorful.

  • This is quite good and it came together simply and quickly; two things high on my criteria during the work week. However the chili powder was quite strong and almost overpowered the other ingredients coming first and foremost as the front runner of flavor. Even with the strength of the chili, the other flavors did come through subtly and with less chili next time, and yes there will be a next time, the ingredients would marry better. Sometimes, as my grandma used to say, less is more..... Thank you Nancy for sharing

  • This was absolutely fabulous My whole family loved it. I cut the breasts down the middle to make them thinner, more like cutlets, and doubled the sauce ingredients to make it saucier. I also used petite diced tomatoes because thats all I had.I cant tell you enough how delicious this is. Thank you Nancy for an awesome recipe

  • Easy and delicious. While I wanted to try the wine substitute, I didnt since we have three young children. The flavor was still rich with a nice balance of acid. I especially enjoyed it and next time will at least double the amount of sauces. We served over white rice.

  • Great flavor. Super easy. Wouldnt change a thing except maybe to pound the chicken breasts a little first to make them thinner. Thanks for a regular addition to our dinner menus

  • This was pretty good - I made a few changes, left out celery seed as I didnt have any and substituted 1 tbsp prepared mustard for the mustard powder as I had run out. Also left out the flour and butter - just combined all the sauce ingredients in a baking dish, threw the chicken breasts in with it, marinated it for 4 hours and then put the whole lot in the oven for 1/2 hour. The chicken was incredibly tender, the sauce had quite a bite to it but not too much. Made it for guests who commented on how tender the chicken was. Served it over Quinoa and Black Beans from this website. There was lots of sauce left over so I baked pork chops in the remaining sauce and they were really good too.

  • This recipe deserves ALL the great reviews It was so savory and delicious. I didnt think the kids would like the hot sauce and other spices, but the resulting flavor is so incredibly good The kids sopped up every drop with the homemade French bread (from this site) I made as Nancy suggested. I cant wait to make this for company. I topped it with some long green beans (haricot verts) and let them steam on top of the simmering sauce and chicken. A superb meal

  • This dish is good ... was expecting it to be better though. Followed the recipe exactly as it was written. However, I have no stewed tomatoes in my cupboard and have crushed tomatoes, so I used that instead. Followed the other reviewers suggestion, added chicken broth and onion too. I halved the chili powder as well. Next time I cook this I will replace the chicken broth with red wine as others suggested. Then will follow the original recipe of 2 teaspoons chili powder.   • I will definitely make tthis again. As an FYI, I didnt have all of the ingredients - Rotel instead of stewed so didnt use the hot sauce. I also hate celery seed, never have mustard powder, etc., so made some substitutions. All in all, pretty much the same. It cooked a little longer than needed because I decided in the last 10 min to throw together biscuits and the sauce got "jammy." What a happy mistake I saved the leftover jam and used it today on my turkey burger sandwich - Ill use this recipe to make more jam. Ive also decided it would be good with about any meat AND would probably work out really well in a crock-pot. So versatile - no way you cant add this to your cooking repetoire.Addnl, I made this for my parents and my Mom, who doesnt like anything outside the box ("why cant you just fry chicken like I do?") really enjoyed this.I wish we could give 1/2 stars - I dont like giving anything 5 stars - thus, the 4 star rating and 5 star ranting

  • After all the rave reviews, I was disapointed with this one. I agree with another reviewer that there are too many flavors competing with each other. If you make this serve it with a bland side dish like white rice or potatoes. This is one of those recipes either you hate, or love it. Sorry, Im in the hate catagory.

  • WOW - this is good Reading a few others I made a few adjustments. Some used red wine instead of water, didnt have red used white. What I had on hand, used a little fresh ground caraway instead of celery seed (out of celery seed). I had some ground chipotle pepper on hand used 1 teaspoon of the chipotle and 1 teaspoon regular chili powder (instead of 2 chili). Some added red, yellow and green sweet pepper toward last 15 minutes, along with onions I did that, ,but used frozen had on hand. Taste testing - recognized why another person put a little frozen corn in theirs -corn adds a soft balance. We served this sauce over rice, the chicken was juicy and oh so tender. The Nobodys Strawberry Watermelon Shakedown smoothie I made a perfect contrast to the meal. My husband ate quite heavily. I also did the salad and French bread - Nancy thanks what a WOW meal

  • This was really good even my picky two year old loved it. I will definately make this again. I used chicken broth instead of water after reading the other reviews. Other than that the only thing I changed was that I used celery salt instead of celery seed because thats all I had. I left out the extra 1 tsp. of salt and I cut the chili powder down to 1 teaspoon as other reviewers suggested.

  • Supreme it is Thank you so much for sharing. I ONLY USED 2 CHICKEN BREAST, BUT THE FULL SCALE SAUCE PART as mentioned by another reviewer. I wanted a lot a sauce and there is only two of us). This is perfect as is and fun to tweak to ones own taste. In lieu of celery seed, I added sliced celery along with a chopped shallot when cooking the chicken in the first phase. I didnt have Worcestershire sauce, so I added 1/4 tsp of sugar along with the 1/8+ tsp of the pepper sauce.. (idea got from internet search). Then I cut the chili powder in half. Not the biggest fan. Half was fine. I also cut the chicken into long strips before cooking. Served over noodles. Chicken was SOOO MOIST Again, Thank you angelfadedblue (Fairly Simple too)

  • My whole family loved this one... even my picky 10 year old. Next time Ill double the sauce ingredients so I can serve it over rice or noodles. I wouldnt leave any of the spices out, as some readers suggested. They all add up to make one fantastic tasting dish

  • Although I rarely cook chicken (or any meat, for that matter), I really loved this recipe We didnt think the sauce was too sweet, however I substituted diced tomatoes for the stewed (stewed generally have sugar added), and I cut down on the brown sugar (to about 1 tsp). I didnt have any hot pepper sauce or celery seed, so I just skipped those - added a bit of cayenne pepper instead (maybe 1/4 tsp or so). Instead of water I used some vegetable broth I had in the fridge - about 3/4 c. Flavor was quite good, there was enough sauce for eating over some brown rice. A salad and green vegetable - green beans, perhaps, would be great with this.

  • Forget the chicken and just make the sauce for vegetarian dishes or use with pork chops - anything. Sauce was amazing. I used Aylmer Accents Spicy Red Pepper, petite cut stewed tomatoes and therefore omitted the hot sauce. Loved it.

  • This was a good lesson on checking my cupboards before starting a dish. But despite having to substitute white sugar with a little mollasses for the brown sugar, not having worcestershire sauce or mustard powder and having bone in chicken, this was fabulous. I want to try it again, true to the recipe and I am sure it will be just as good, if not better. We served it with penne pasta and the zucchini provencal recipe from this site.

  • Ill admit - the combination of seasonings does sound kind of strange, but this is a great dish. My boyfriend does not eat tomatos, so I pureed the sauce, and every last bit was eaten Next time, I will use red wine for the water, and use 1/2 the brown sugar (this is very very sweet). I threw in cooked rice (1 cup uncooked, cooked with 1 1/2 cups water) with 10 minutes to go, so I had a nice hearty, sauce with rice. You need to at least double the sauce. Cannot wait for leftovers today (never thought Id ever hear myself say THAT)

  • Very good recipe - wonderful flavor. Served this two nights in a row - first with pasta and then with rice. Rice much, much better. Did reduce brown sugar to 1 tbl., used balsamic vinegar, used sherry since I had no other, also used mushrooms and onions. Will make again.
